Description

Surfactants are in everyday products such as detergents, foodstuffs, and cosmetics. Their molecules have one part which is water soluble and another which is not. This gives them two valuable properties: they adsorb at surfaces, and they stick together in water. This book treats the physical chemistry and physics underlying surfactants.

  • Covers the fundamental colloid and surface chemistry of systems containing surfactants
  • Includes sections focusing on experimental methods
  • Themes and Connections section give reader a broader and more coherent understanding of the subject matter
  • Unique and timely chapters on particle adsorption at liquid interfaces and on hydrophobic hydration
  • Includes short biographies of scientists who have contributed to the foundations of the subject, including Benjamin Franklin and Lord Kelvin
  • Useful for industrial researchers as well as graduate students and academic researchers
  • Relevant not only to chemistry but also to chemical engineering, food science, pharmacy and biological and medical sciences

About the Author(s)

Bob Aveyard, Professor Emeritus of Colloid and Surface Chemistry, University of Hull

Bob Aveyard is Professor Emeritus at the University of Hull, where he was Personal Chair in Colloid and Surface Chemistry. He was awarded Colloid and Interface Science Group Medal of the Royal Society of Chemistry in 1994 for "contributions to colloid and surface chemistry". Aveyard has 40 years experience teaching at undergraduate, postgraduate and postdoctoral levels, contributing to courses for industrial researchers, and directing research sponsored by Government and major British and overseas companies. He spent a sabbatical year with BP Research at Sunbury (1987-1988). He earned his Ph.D. at Sheffield University, and did postdoctoral research in the Department of Colloid Science at Cambridge University.

Reviews

"I recommend this book not only to undergraduates, graduates and PhD students in colloid and interface science and related areas, but also to researchers in this field. Even established experts will find new insights into the various areas of surfactant science. I am sure readers will be inspired by the way the world of surfactants and their behaviour is presented here." - Reinhard Miller, Colloids and Interfaces
